there is a restaurant in la that i love called ammo. they have a delicious brown rice dish that inspired this quinoa. it is great hot off the stove but also good cold...i use any leftovers over greens for a delicious and hearty salad...
ingredients/supplies:
-1 cup of quinoa
-2 cups vegetable (or chicken broth or water if you do not have broth)
-1 onion
-1.5 cups of organic baby heirloom tomatoes (or any small tomatoes you prefer)
-1 jalapeno
-olive oil
-salt and pepper to taste
-a knife, cutting board, measuring cups, 2 quart sauce pan with lid, and saute pan
prepping/chopping/cooking:
prep:
-measure 2 cups of veggie or chicken broth and place in 2 quart pot (or which ever small pot you have with a lid)
-measure 1 cup of quinoa and set aside
-place pot with broth over medium high heat to bring to a boil
-rinse and dry tomatoes and jalapeno
-set saute pan on stove
chop:
-dice onion
-deseed and remove the core of the jalapeno (if you like lots of spice, leave the seeds in)
-dice jalapeno
-slice baby tomatoes in half
cook:
-once broth is boiling, pour in quinoa and cover over medium-low heat and cook for about 12 mins or until all the broth is absorbed (follow the directions for whichever quinoa you buy. i use bob's red mill but use the brand you like...i substitute the broth for the suggested water for more flavor but it works well to just use water if you don't have broth on hand)
-after quinoa is cooked, fluff it with a fork and set it aside
-heat saute pan and add olive oil once the pan is hot
-add the onions and jalapenos
-add the tomatoes once the onions begin to soften
-add a pinch of salt
-add the quinoa once the tomatoes are warm and just start to break down
-saute until evenly mixed
-salt and pepper to taste
i used veggie broth so the quinoa is a bit yellow from the broth which i think gives it a wonderful color...
i sometimes add a dash of rice wine vinegar or white vinegar to this depending what i am serving it with...it is also good with asparagus added...just make sure you cook any added veggies that you come up with before adding in the tomatoes or quinoa....
