one thing that i have come to learn in cooking is that there many more salts out there than i actually use.  my husband bought me salted after a trip to napa where i decided to buy truffle salt at a gourmet grocery store that made our car smell amazing...if you care for truffles.  this book gives the history of salt and is really more of a history book than anything else but it is interesting because it describes all the different kinds of salt available and how to shop for them.

there are two kinds of salt that i use all the time...kosher salt and fleur de sel.  anytime i mention salt in a recipe...i should be specific and say kosher salt because that is what i mean by salt.  i use fleur de sel on salads and add it to roasted veggies before serving them...it is more of a delicious salt garnish in my kitchen.

i have learned that good salt changes everything in the kitchen....it makes it so much better.
